ABOUT THE WINE
Purposefully crafted to age for at least a decade or three, crafted from a premier near perfect single site of Elgin Riesling rooted in decomposed Table Mountain sandstone over white clay. Harvested in early March, allowed skin-contact, cold fermented with “Champagne” yeasts & bottled after fermentation with a light filtration to preserve the electric acidity, zesty citrus fruit flavours, floral aromatics and spice. Destined for years of cellaring to fully revel in its complexities. Best served chilled, enjoy with fresh crustaceans ‘n other denizens of the deep, rustic poultry dishes, fine fromage or charcuterie. Only 1270 bottles of this fine cool climate wine were crafted.
